Springtime Cuties

Springtime is such a bright pretty colorful time, and what a great season for some cute cupcakes! Here are a few that I found, and inspired my recipe below for lemon cupcakes with strawberry frosting!

Lemon Cupcakes with Strawberry Frosting


1/2 c. butter

2/3 c. sugar

3 Large eggs

1 tsp vanilla

zest of one large lemon

1 1/2 c. flour

1 1/2 tsp baking powder

1/4 tsp salt

1/4 c. milk

Preheat oven to 350 degrees.  Prepare 12 muffin cups with liners.  In a large mixing bowl on medium speed beat butter, and sugar until light and fluffy.  Add the eggs, one at a time, and once well blended add the vanilla and lemon zest.  Add dry ingredients flour, baking powder, and salt alternating with the milk  until well incorporated.

Fill muffin cups with batter, and bake in preheated oven for 18-20 minutes. Cool on a wire rack.  Once cooled cut a deep hole into the center of each cupcake, a coring tool helps make this process go quickly.  If lemon filling is ready add to the center of each cupcake.


3 large eggs

1/3 c. lemon juice

1 Tbsp lemon zest

3/4 c. sugar

4 Tbsp butter room temp and cut into pieces

In a stainless steel double boiler, whisk together the eggs, sugar, and lemon juice until well blended. Cook stirring constantly to prevent curdling until mixture becomes thick.  Remove from heat and pour through a strainer to remove lumps.  Add the pieces of room temperature butter and whisk until butter is melted.  Add the lemon zest and allow to cool. Cover and refrigerate until chilled


3/4 c. frozen strawberries thawed

1 c. butter

pinch of salt

3 1/2 c. confectioners sugar

1/2 tsp. vanilla

In a large mixing bowl blend together butter salt and vanilla, fold in strawberries, and add confectioners sugar mixing well.  Chill slightly before using.
